Weekend Bakes: Take Some Time to Relax

I’ll be honest with you, I’ve been posting later and less regularly than I like to this week as I have been under the weather! It was always in the post and, as it turns out, the post-Goodwood lurgy was delivered right on schedule… and kind of put a dampener on my week.

Enough of all of that moaning! It kicked my ass for 24 hours and now I feel about a million times better and am looking forward to a fairly relaxing weekend ahead.

So I thought I would share some recipes with you for your own relaxing weekend, to make it all the more leisurely and indulgent. On either Saturday or Sunday morning, I think you should treat yourself to a batch of freshly-made breakfast muffins.

The great thing about these recipes is that you can do all the ‘heavy-lifting’ the night before – weigh out your dry ingredients into a bowl (cover with clingfilm), put your muffin papers into your muffin tin, mix your wet ingredients together into a jug and pop them, covered, in the fridge.

When you awake, all you need to do is pre-heat your oven, mix the wet ingredients into the dry ingredients and divide between your muffin cases. The muffins need only 20 minutes in the oven and 10 minutes to cool so should easily be ready by your second cup of coffee or pot of tea.

I would love to take a little of my own advice. I have been working flat out and playing hard too so as not to miss out on any of the summer fun. This will not stop and I will never change! And they said you couldn’t burn the candle at both ends…

I am certainly not complaining but am going to try to allocate at least a little time this weekend to study that copy of Vogue that I bought with good intentions at the beginning of the week. As we wind down this Thursday, let’s all try to take a little time this weekend to do nothing… and eat muffins for breakfast!
