I have been trying soooooo hard to be good since Christmas. I’m not dieting per se, so much as just not eating as much as I would like to… as much as I did over the festive season; everything. I ate everything, constantly. So I’m restoring the equilibrium and not mainlining chocolate for breakfast at the moment.
The problem is that January is a long month and a hard old slog. I could do with a box of Quality Street and a bottle of Prosecco!
Did you go crazy and buy all the healthy food? Did you eat it all or is some of it mutating in the back of the fridge? I was thinking about this tragic waste of good food and thought I would suggest some Weekend Bakes that use up well-meaning vegetables and turn them into cake.
First is the obvious one… if you have black bananas lurking in the bowl, these are perfect for Banana Cake. This was one recipe that I developed for Chris, who is so in love with Banana Cake that he purposefully ignores fresh bananas and sits in wait for the moment I give in and bake them into cake.
Even slightly floppy carrots can be rescued and turned into Carrot Cake. Remember to wash carrots thoroughly before grating them as they can harbour some very nasty bacteria on them. I’d like to lose a few pounds but not like that.
And if you are really trying to be good, I do have a recipe for you. My Coffee & Avocado Maple Breakfast Muffins contain mixed grains for rocket fuel and maple syrup in the place of sugar… that’s healthy, right? These muffins are the perfect way to use up sad avocados and are the perfect way to kick start your day. I like them warm from from the oven, spread with a little butter.
These muffins are savoury rather than sweet. They can be made using banana rather than avocado if you prefer a little more sweetness.
If you are well and truly done with January and want to seriously treat yourself and your loved ones, you could turn those sad bananas into an Elvis Cake. This is falling off the wagon in a sequinned jumpsuit, turning a quick somersault and landing upright on your heels.
I hope that your January is going well and I hope that if you are still enjoying a little sugar this month, you are doing it unapologetically. However, if you are going to fall off the wagon, do it in style!
