Weekend Bakes: California Raisin Scones

It’s all becoming very real… today, I will be packing up my most glamorous frocks and packing those last few essential pieces of baking kit before heading down to Brighton tomorrow. Foodies Festival starts this weekend!

As a part of my daily demonstrations in the newly relaunched Cakes & Desserts Theatre, I will be preparing the most delicious afternoon teatime treat with these gorgeous California Raisin Scones.

I must confess to having eaten my fair share of these this week as I played around with the recipe. They are fairly low on sugar and butter but laden with sweet California Raisins and the most wonderfully light and fluffy texture.

My rule with scones is that they are best served on the day that you bake and, because these take only 10-12 minutes in a high oven, you can be pretty speedy in getting a batch out of your kitchen in time for the day’s adventures.

At Foodies Festival this weekend, I will be baking these in real time LIVE on stage and topping them off with a generous helping of Pinkster Gin Jam. I am addicted to the stuff. The origins story is epic…

Pinkster Gin is distilled with real raspberries… these raspberries are then removed from the gin and squished and preserved into the most delicious jam I have tasted. If you come to the theatre, there is every chance that you will get to sample this.

I will also be shaking up a very simple gin cocktail in only three ingredients. Believe me, my Afternoon Tea & Cocktails demo is the place to be!
