Continuing this week’s theme of ‘oh, holy crap, there’s a lot going on at the moment!’ I wanted to share a little something delicious for your weekend baking needs, as well as a little sneaky peek into things to come.
I’m just returned from a wonderfully inspiring lunch with stunning Americana songstress Danni Nicholls, in beautiful Bedford’s newest haunt for those in need of burgers and fries, Meatcure.
We took no photos because our faces were firmly full of food at all times, punctuated by excited conversations about music and cake. The two are such natural bedfellows.
Talk of Nashville and the SuperNats vintage hot rod car show this weekend got me all in the mood for Key Lime Pie. This recipe is going to be perfect this weekend, a slice of Route 66 whatever the British weather decides to do!
In addition to gathering your usual ingredients, you will need to rustle up a sugar thermometer. This is easy enough done at any department store with a respectable kitchen offering (*cough* John Lewis *cough*) and will make your Italian Meringue topping pretty much foolproof.
I’ve created this weird little pie as a hybrid mix of Key Lime Pie (with limes from everywhere BUT the Florida Keys!), Lemon Meringue Pie, and those lovely little chocolate and lime sweeties that my Mum loves – with the addition of chocolate chip cookies in the biscuit base. It’s unconventional and perfect at the same time.
