Wedding Cake Wednesday: Chocolate Drip Cake

Those of you who follow me on Instagram will know that I delivered two very different Wedding Cakes on Saturday. The cakes were very different because these were two very different Weddings and each cake needed to fit perfectly within the day.

This week, I will be looking at the second of these cakes on my delivery day. My handsome assistant, Chris, and I loaded up our car inbetween rain showers and hit the road.

Steve and Emma did not want a traditional looking Wedding Cake. The couple had fallen in love with the chocolate drip effect and wanted this brought into their Wedding Cake design. Our first concept was for the top and bottom tiers of this two-tiered cake to be in reverse; with the top tier white chocolate over chocolate buttercream, and the top tier dark chocolate over vanilla buttercream.

The decision was made to simplify, both the design and the flavour combinations. Originally, cherry had been added to the chocolate tier but it was decided that a classic Chocolate Mud Cake would go down nicely! From the feedback I have had, this was very much the case.

The top tier was a Pistachio & Raspberry Cake with cocoa nibs scattered on top of the raspberry buttercream between each layer of cake for an extra chocolate hit. Salivating? Yeah, me too.

Setting up the cake at The Londesborough pub in Stoke Newington was a joy. I was given a cup of tea (a surefire way to my heart!) and set to work assembling the cake. Buttercreamed cakes are more delicate than sugarpaste covered ones so there is always a little bit of work that needs to be done to create a tidy, seamless finish. I always travel with extra buttercream and a palette knife! This is me, piping small beads of chocolate ganache around the bottom of the top tier to perfect the finish.

The cake was crowned with handmade chocolate roses, chopped pistachio nuts, cocoa nibs, and gold sugar crunch for a subtle bit of bling.

I simply adore this cake and enjoyed every second of making it. The feedback that I have had from Bride, Groom and guests via Instagram has been really amazing! Steve and Emma even sat down to leftover cake for their first dinner as a married couple… you can’t get much of a better start than that.
